Compiling it has almost been like raising a child. It was extra hard getting these dishes together, since we never have used recipes and trained our kitchen staff without them. I’ve spent three years, cooking, correcting, pushing and prodding it into the kind of cookbook I’ve always wanted. Now, I want you to enjoy it too. I made it to be used, not just take up space.
